Ecco la traduzione...


...dei tartufi qui ;)

il post, a dirla tutta...mmm...avrebbe potuto degnamente fregiarsi del titolo "tartufi: cronaca di un mezzo disastro" o "tartufi: cronaca di un disastro scampato"...

alla fine il risultato è ciò che vedete sopra :) bhé, si fanno mangiare :D

la ricetta originale proviene dal fastastistrepitosissimo blog di jen Use real butter

ed era per 90 tartufini...sarà che io li ho fatti molto più grossi...o non so che altro, fatto sta che con un terzo della dose me ne sono venuti "solo" 17 °_° mah...

ecco le dosi di jen (lei, fra l'altro, ne ha fatti 180 in una volta °_° perché sbagliò le dosi :D :D):

450 g di cioccolato fondente di ottima qualità
225 g panna liquida (quella da montare)
2-4 cucchiai di Grand Marnier, facoltativo, secondo proprio gusto (io lo devo ancora comprare questo liquore!!)


e le mie dosi:

150 g cioccolato
75 g panna
1 cucchiaio rum

1. Tritare la cioccolata finemente e metterla in una ciotola di medie dimensioni.

2. Scaldare la panna finchè non giunge ad ebollizione.
Togliere dal fuoco e versare la panna sul cioccolato. Assicurandosi che tutto il cioccolato sia
uniformemente coperto dalla panna, lasciare stare per qualche minuto il tutto.

3. Mischiare poi il tutto sino ad ottenere un composto setoso, omogeneo e soffice

4. Unire il liquore.

5. Lasciare che la ganache si rapprenda solidificandosi.

6. Fare delle porzioni con un cucchiaino, e poi rotolarle fra le mani per ottenere delle palline (oppure fare le porzioni con la sac a poche)

7. Rifinire a piacere: rotolare in cacao, zucchero a velo, frutta secca tritata, cioccolato a granella, oppure ricoprire con cioccolato temperato.
Potrebbe essere necessario un doppio passaggio nella cioccolata se la prima copertura si rompe.

Spolverizzare a piacere di brillantini alimentari (si chiamano così???) che io naturalmente non trovo...

i miei problemi:

1-2. cioccolata tritata non abbastanza finemente, ergo, ha faticato a sciogliersi e l'ho dovuta rimettere a bagnomaria con la panna per ottenere una miscela omogenea

6. l'ho fatto il giorno seguente

i problemi più grossi li ho avuti con il temperaggio del cioccolato (cosa che non credo replicherò mai più in vita mia). forse ciò è dovuto a:
- non così ottima qualità del cioccolato (altamente probabile)
- inesperienza del pasticcere (anche questo ha un alto grado di probabilità)
- aver lasciato troppo a lungo il cioccolato a bagnomaria (mediamente probabile)

alcuni tartufi si sono quasi sciolti mentre cercavo di ricoprirli di cioccolato, e questo spiega le forme orribili che hanno...

la prossima volta che/se li faccio...
mi compro uno stampo per cioccolatini :P tjé....

What's this?? .................. I tell you! a big mess!!


these were meant to be like the ones I saw in Jen's wonderful blog Use real butter...
erm,...I had a few (just a few????) problems during the preparation...
it was my first try, hope next time my truffles are gonna be better than these :(

original recipe: yelds 90 truffles
1 pound good quality dark chocolate
1 cup heavy cream
2-4 tbsps Grand Marnier (optional, to taste)

I made a third of the original recipe, [but got around 17 truffles...(???)]
150 g dark chocolate
75 g heavy cream
1 tbsps rum (I don't have any Grand Marnier)

(my comments in brackets/yellow coloured)

1. Fine chop the chocolate and place in a medium bowl. (here is where problems begin! chocolate wasn't chopped fine enough! I had then to put everything en bain marie, to allow chocolate to melt properly)

2. Heat the cream until it begins to boil. Remove from heat and pour the cream over the chocolate. Let sit for a minute (make sure all chocolate is covered by the cream).



3. Stir the chocolate and cream together until velvety and smooth. Stir in Grand Marnier. Let the ganache cool until solid.



4. (day nb 2) Scoop out teaspoon-size balls of ganache and roll into a ball.

5. Roll in cocoa powder, powdered sugar, nuts, crushed candy, or enrobe in tempered chocolate (if enrobing, you will want a pound of chocolate for the tempering and double enrobing may be necessary if cracking occurs on the first shell).


I also had a lot of troubles with chocolate, above all I found it particularly hard to melt and temper it. The causes may be connected with:
- low quality chocolate
- inexperience of the confectioner (and guess who's this????)
- leaving too long chocolate en bain marie


some truffles melted while I was trying to enrobe them... >:(
result: they are not very well rolled at all >:(

anyway...maybe what I need is just a little bit of practice... (let's hope so...)
